Millie's stuffed celery

This is a simple appetizer to use before a holiday meal. I've adapted it from my mother's full fat recipe to one that's slightly more healthy. It only takes a few minutes to make and is a festive looking and crunchy tasting introduction to a heavy meal.

Ingredients

  1. 1 large bunch of very fresh celery
  2. 1 8 ounce package of reduced fat or non-fat cream cheese
  3. 1/2 cup of low fat mayonnaise
  4. garlic powder
  5. white pepper
  6. paprika

Steps

  1. Clean the celery and cut stalks into about 4" pieces
  2. Mix together cream cheese, mayonnaise
  3. Add garlic powder and white pepper to taste
  4. Fill each stalk with cream cheese mixture
  5. Sprinkle liberally with paprika
  6. Place on an attractive tray and serve
