Mom's Zucchini Fritters

This is a family favorite hors d'ouvres recipe.  These go so quickly that family members tend to linger around the platter as not to miss out.

 

Enjoy them at parties, while watching Sunday football or just hanging out with friends.

Ingredients

  1. 2-3 ripe zucchinis
  2. 1 cup of flour
  3. 1/4 cup of chopped parsley
  4. 3 eggs
  5. 1/4 cup of pecorino romano cheese
  6. Salt and pepper to taste

Steps

  1. Chop zucchini into small pieces (keep skin on)
  2. Put zucchini in colander to drain
  3. In a plastic bag mix flower, salt and pepper.
  4. Make sure zucchini is well drained (you may need to dry off with paper towels).
  5. Add zucchini to bag of flour and mix well.
  6. In a bowl mix the eggs, parsley, cheese and a bit more salt and pepper.
  7. Remove zucchni from flour and pat off but make sure a dusting of the flour covers the zucchini pieces. Add the zucchini to the egg mix.
  8. Heat a tablespoon of olive oil in a deep frying pan.
  9. Using a tablespoon, take a spoonful of the zucchini and egg mixture and add to the frying pan. Continue in batches until all of the mixture is gone
  10. Cook the fritters on both sides until golden brown.
  11. When done place the fritters on a paper towel covered plate or platter to cool off and make sure all moisture is absorbed.

Patty: Hi Starburst, no I've never tried baking them. You could probably bake them part of the way through and then toss them in a frying pan to give them a golden crisp at the end. Cheers!

Patty: Hi MMD, we don't usually have a side dip with it but a ranch dressing would probably taste very good with it. cheers!
