- First soak raisins in 2 c cold water for 1 hour. Then, in large bowl put butter, sugar, salt, mace and lemon extract. Pour scalded milk over these ingredients; when mixture is lukewarm, add beaten eggs, yeast mixture, raisins (drained), rinds and citron.
- Gradually add half of flour and beat with wooden spoon for 3 minutes. Add remaining flour and turn onto floured board and knead until smooth, about 5 minutes. Put in large bowl and let rise until double in bulk; then punch down and shape into two round loaves.
- Put in well greased pans and let rise until double in bulk. Bake at 400 degrees F for 15 minutes. Reduce heat to 350 degrees for another 35 minutes. Remove from pans and brush with melted butter. Cool on wire rack.
