Panettone

Panettone is a tall sweet bread that is an Italian dessert delicacy and is served for the holidays.  This recipe comes from my mother-in-law Alba, whose parents emigrated from Italy to the U.S.

Ingredients

  1. 1/2 box raisins (15 oz), preferably white
  2. 2 Tb butter
  3. 2 Tb sugar
  4. 1 tsp salt
  5. 1/8 tsp mace
  6. 1 tsp lemon extract
  7. 2 c scalded milk
  8. 2 eggs, beaten
  9. 2 pkg dry yeast, dissolved in 1/4 c lukewarm water
  10. Grated rind of 1 lemon
  11. Grated rind of 1 orange
  12. Container of citron
  13. 7 c flour
  14. Melted butter

Steps

  1. First soak raisins in 2 c cold water for 1 hour. Then, in large bowl put butter, sugar, salt, mace and lemon extract. Pour scalded milk over these ingredients; when mixture is lukewarm, add beaten eggs, yeast mixture, raisins (drained), rinds and citron.
  2. Gradually add half of flour and beat with wooden spoon for 3 minutes. Add remaining flour and turn onto floured board and knead until smooth, about 5 minutes. Put in large bowl and let rise until double in bulk; then punch down and shape into two round loaves.
  3. Put in well greased pans and let rise until double in bulk. Bake at 400 degrees F for 15 minutes. Reduce heat to 350 degrees for another 35 minutes. Remove from pans and brush with melted butter. Cool on wire rack.
