Soft Chewy Variant Of Tollhouse Chocolate Chip Cookies Recipe

This is my mom's chocolate chip cookie recipe. She made it often and I loved coming home to the cookie dough in the fridge and the cookies in the jar. Yum. Watch a short movie about how this recipe has affected three generations in my family.

Ingredients

  1. 2 1/4 cup flour
  2. 1 tsp. salt
  3. 1 tsp. baking soda
  4. 1 cup Crisco (white, all vegetable "lard")
  5. 3/4 cup brown sugar
  6. 3/4 cup sugar
  7. 1 tsp. vanilla extract
  8. 2 large eggs
  9. 2 cups chocolate chips

Steps

  1. Mix together flour, salt, baking soda, set aside
  2. Put into mixing bowl Crisco, sugar, brown sugar, vanilla
  3. Mix at low speed
  4. Add eggs one at a time while mixing
  5. Add dry ingredients 1/3 at a time, pausing mixer while you add
  6. Add heaping spoonfuls of flour until dough cleans side of mixing bowl
  7. Remove from mixer, add 1/2 package of chocolate chips, fold in by hand
  8. Preheat oven to 25º less than recipe calls for (350º)
  9. Make extremely tall dough balls: 1 inch diameter, 2.5 inches tall
  10. Cook less than asked for, approximately 9-11 minutes until just starting to brown
  11. Remove, cool

jimr: I haven't tried the yellow crisco. Please let me know how it works. I have also found that those tall dough balls and undercooking a bit to work for me.

loriell: So using lard rather than butter or margarine and a lower oven temp( I always thought 375 was too high) is all there is to it? Could I use the yellow crisco- I think its butter flavor?

jimr: Thanks, lizardman. Hope you like them! I have to say though, that having these cookies without any milk just seems wrong. But if you are lactose intolerant, I guess that's the way the cookie crumbles (groan). Enjoy...

Pinckney: Great video and recipe. I always add a little more salt than the bag recipe calls for but I doubt your recipe can be improved upon.
